Saperavi
An ancient Georgian variety, one of the few 'teinturier' (red-fleshed) grapes in the world. Features remarkably deep color, powerful tannins, and high acidity. Develops into complex, captivating wines with extended aging.
The 'birthplace of wine' where winemaking has occurred for 8,000 years. The traditional method of fermenting and aging in qvevri (clay vessels buried underground) was registered as UNESCO Intangible Cultural Heritage in 2013. As the origin of orange (amber) wine, it attracts natural wine enthusiasts worldwide.
Archaeological evidence shows winemaking since 6000 BC. During Soviet era, production shifted to mass production, but after independence, traditional qvevri methods were revived. Currently over 500 indigenous varieties are cultivated, the most in the world.
Amber wines made in qvevri gain unique tannins and deep amber color through extended skin contact fermentation. Red Saperavi is remarkably dense with powerful tannins and dark fruit flavors. Exceptional pairing with Georgian dishes like Shkmeruli and Khinkali.
