Assyrtiko
The signature variety of Santorini, Greece. Features extraordinary minerality from volcanic soils and sharp acidity. Retains acidity even in hot climates, producing some of the world's most mineral-driven white wines.
A volcanic island in the Aegean Sea with 3,500 years of winemaking history. The unique 'kouloura' basket-training protects vines from strong winds. Pre-phylloxera, own-rooted old vines remain, and wines from Assyrtiko are rich in volcanic minerals.
Winemaking dates back to the Minoan civilization around 1600 BC. Cultivation continued even after the great eruption of 1628 BC, through Byzantine times to the present. Gaining international attention since the late 20th century, leading the Greek wine renaissance.
Assyrtiko features sharp acidity and lemony, saline minerality. Excellent with seafood, perfect for raw oysters and grilled fish. Vinsanto (sweet) develops complex dried fruit flavors with aging.
